If we submit an article or project early in the week and it is not accepted, are we allowed to resubmit a new one as long as it is submitted by the due date?

Yes. As stated in the course syllabus, you are encouraged to submit work early.

Am I the only one who didn't have enough time to finish the exam? There is no way 60 minutes is enough time for a 100 question exam in my opinion.

As stated in the syllabus and in the posting I did to the Discussions area of Canvas, the expectation is that you will study all the questions in your text prior to taking the exam, just as you would in a face to face class. If you do that you will have plenty of time to answer the questions .
